Chef SaschaWolhandler gives us a lesson on new ways to prepare the summertime staple--the burger.
Papa Hemingway’s Favorite Burger Recipe
1 lb ground beef
2 doves minced garlic
1 heaping teaspoon India relish
2 minced green onions
2 tablespoons capers
1 heaping teaspoons sage
½ teaspoon mei yen powder
1 egg beaten
1/3 cup dry red wine
1 tablespoon cooking oil
Procedure
Break up the meat with a fork, and scatter the garlic, onion and all dry seasonings. Place in the refrigerator for 10 minutes. Add the relish, egg,capers and wine and let marinate for 10 to 15 minutes.
Make patties, place oil in the sauté pan and cook to desired temperature. Place on toasted buns and drink with copious amounts of wine.
Sascha’s favorite burger with blue cheese, fig jam and bacon
2 pieces of crispy bacon per burger
Blue cheese crumbles
1 Jar of fig jam spread
Procedure
Grill burgers to desired temperature
Toast buns
Spread buns with fig jam
Place 2 pieces of bacon on the jam and crumble the blue cheese. Place hot burger on top and enjoy.
Lamb Burgers
1 lb of coarsely ground lamb
½ lb of marguez lamb sausage minced
1 onion minced onion
1tablespoon coriander
Salt and pepper
1 tablespoon cumin
4 tablespoon of oil
1 tablespoon coriander
4 slices of grilled eggplant
½ cup of favorite hummus
Procedure
Saute the onion, marguez sausage cover with seasonings, cool
Combine ingredients with the cooled mixture
Form into patties
Toast the buns
Create your burger with hummus, feta, grilled eggplant
