February 4, 2014 - Radio Kitchen - Pepper with Liz Nuttle
Pepper is called "The King of All Spices" and with good reason. When you look at its place in history, pepper is right up there with beer, salt and sugar as the most significant foods of all time. Chef Jerry Pellegrino of Waterfront Kitchen couldn't get along without it, and neither could I. When I stopped to ponder pepper, I realized I knew next to nothing about pepper. Which is why we asked our friend Liz Nuttle, owner of En Olivier fine oils and vinegars, to shed a little light on the subject.
Liz owns En Olivier, one of Baltimore's most exciting gourmet shops. She specializes in high end varietal olive oil, balsamic vinegars, specialty salts and now exotic pepper as well. Liz brought along five of the most popular peppers she sells: White Malabar, Green Malabar, Cubeb, Pink Peppercorns and the famous Tellicherry.
We tasted through the peppers, which were all unique.
