The Eastern oyster, one of our region’s favorite delicacies, can be enjoyed raw, grilled, fried, or as the main ingredients in stews and stuffings.   Historically, the popularity of the Chesapeake Bay oysters fed a thriving fishery, and by the end of the 19th century, more than 60 million pounds of oysters were being harvested annually in Maryland’s portion of the bay alone.   These days, oyster harvests are weighing in at less than 1% of historical levels.   There are now measures in place to help restore oyster populations, and everyone can help.
