Beginning in the 1950s, Frances Kitching operated a restaurant and inn on Smith Island that she went on to run for 25 years. In 1981, Ms. Kitching and the writer Susan Stiles Dowell published a cookbook that brought the cuisine of Smith Island, including its famous ten-layer cake, to a wider public. Mrs. Kitching’s Smith Island Cookbook has just been published in a 30th anniversary re-print.
